"IRRÉSISTIBLE"  Méthode Ancestrale   Domaine des Marrans
A sort of fizzy pink Beaujolais - the grape variety is Gamay. Unlike other methods of making sparkling wine, nothing is added: only natural yeast and the sugar naturally occurring in the grapes produce the alcohol, which is only 8%. And the fermentation is stopped by cooling before the sugar has fully fermented to give a slightly sweet wine. Sounds unpromising? Yes, but the tannin from the skins balances the gentle sweetness to give a thoroughly refreshing drink -excellent both as an aperitif and with puddings.

Anything from Gachot-Monot is wonderful (you will find the rest of their wines in the Burgundy pages). This is made from a blend of black grapes, Pinot Noir and Gamay, and is an excellent substitute for champagne.

Made from 100% Pinot Noir grapes, this comes from the village of Les Riceys, where they specialise in growing Pinot Noir. High quality, delicious champagne, with a full flavour.

This comes from the village of Villers-Marmery on the Montagne de Reims. Unlike the surrounding villages, this is a Chardonnay village, and this wine is made from 100% Chardonnay (Blanc de Blancs). It is crisp, fresh, elegant and impeccably made.

From a vineyard on the edge of Monmouth, this is made from 100% Chardonnay grapes, grown organically. It is crisp, with a pleasing element of yeastiness in the flavour.

GUY DE FOREZ Millésimé 2004
2004 always looked promising, and now that it has been released it does not disappoint: deepish colour, with very persistent mousse; plenty of apple on the nose; in the mouth, appley at first, but then the flavour develops - hazelnuts, blossom, a hint of baked apple, toffee. Delicious - this is really fine vintage champagne.
