"IRRÉSISTIBLE" Méthode Ancestrale Domaine des Marrans A sort of fizzy pink Beaujolais - the grape variety is Gamay. Unlike other methods of making sparkling wine, nothing is added: only natural yeast and the sugar naturally occurring in the grapes produce the alcohol, which is only 8%. And the fermentation is stopped by cooling before the sugar has fully fermented to give a slightly sweet wine. Sounds unpromising? Yes, but the tannin from the skins balances the gentle sweetness to give a thoroughly refreshing drink -excellent both as an aperitif and with puddings.

GUY DE FOREZ Millésimé 2004 2004 always looked promising, and now that it has been released it does not disappoint: deepish colour, with very persistent mousse; plenty of apple on the nose; in the mouth, appley at first, but then the flavour develops - hazelnuts, blossom, a hint of baked apple, toffee. Delicious - this is really fine vintage champagne.
